 | My grandmother canned my baby food, my mother canned our winter veggies all summer and now I can as much food as I can.
In these days of so much uncertainty with everything, a simple process with a inexpensive pressure canner can make a real difference in times of hardship. And here in Michigan we know about hardship.
So, lets talk about canning food. This is what I can during the summer:
- Tomatoes (simple method for skinning - boil and shuck skin)
- Corn (takes lots of ears of corn to make canned corn)
- Green Beans (add a little butter to the batch for flavor)
- Chili (gotta be careful - beans can outgas after canning and ruin the batch)
- Potatoes (I do up to 50 lbs at a time)
- Soups (Potato, Chicken/rice/noodle, NO sodium)
